Season shrimp all over with salt and pepper. When oil is shimmering but not smoking, add shrimp and sear until underside is golden, about 2 minutes, then flip until opaque. Remove from skillet and set aside.

Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.
2. Stir in heavy cream, Parmesan and basil and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes.
3. Return shrimp to skillet and stir to combine. Cook until shrimp is heated through, garnish with more basil and squeeze lemon on top before serving.

300 г. сирене  
3 бр. яйца  
3 с.л. кисело мляко

**Начин на приготвяне:**

*Плънката:* Сиренето се натрошава и към него се добавят последователно яйцата, киселото мляко, содата и брашното, като се разбърква непрекъснато.

*Баницата:* Редят се по два броя кори, които на всеки ред се поръсват се с олио и се маже от плънката. Най-отгоре се завършва с кори.

Баницата се нарязва с остър нож внимателно на парчета, залива се с разтопено масло и се пече във фурна на 200 градуса до зачервяване.

*По желание:* Може да се направи заливка със същите продукти като за плънката, но без сиренето, с която да се залее баницата десетина минути преди да бъде готова. Също така вкусно се получава и като се добави към нея малко настърган кашкавал.

Най-обичаната закуска от малки и големи. В същото време, те са идеални и за предястие, и основно ястие, и въпреки, че за закуска сме свикнали да ги похапваме с нещо сладко, с палачинки се приготвят и солени вкуснотии като палачинкова торта, например. Могат да се напълнят с всевъзможни плънки, пиле, кайма, картофено пюре или плънка от типа „изчисти хладилник“. В някои страни се нарязват на тънки ленти и се сервират в горещ бульон, а за палачинкова торта с шоколад дори няма да споменавам. Едно е ясно – палачинките са нещо универсално.

Преди време получих въпрос – защо няма рецепта за обикновени палачинки, то с това трябваше да започнеш. Отговорът е – не знам. Най-вероятно, защото след като си направил хиляди палачинки действаш по усет и не замерваш продуктите, че да напишеш рецепта, а докато се сетиш, че си имал намерение да мериш, сместа за палачинки вече е готова. Ами – ето я най-после рецептата! Продуктите са прилежно измерени, изписах един химикал с обяснения и семейството е доволно, че съм скокнала по тъмно да въртя палачинки.

Казват, че съвършената палачинка е тънка, гъвкава, с дантелени краища и равномерен цвят. Има много различни рецепти и въпреки, че изглежда елементарно да се направят палачинки, те си имат някои малки особености. Двете важни неща са гъстотата на сместа и температурата на тигана. Когато сместа е много рядка, палачинките ще залепват, ще се разкъсват, а когато е твърде гъста – ще стоят жилави и евентуално, недопечени. Това ни води до въпроса за температурата на тигана. Той трябва да е добре загрят, но не твърде силен, защото палачинката бързо ще получи цвят, а в същото време вътре ще остане сурова.

Опитните домакини са наясно, че има и един трети важен момент – колко точно тесто да се налее в тигана. Тук правилото „един черпак“, според мен, е много подвеждащо, защото черпаците, а и тиганите са с най-различни размери. Тестото трябва да е достатъчно, че да покрива дъното на тигана на тънък, равномерен слой. Аз ползвам тиган с диаметър 28 см., но ако вашият е 24, например, и мерим с един и същи черпак, палачинките ви ще са по-дебели.

Накрая, преди да напиша продуктите, трябва да кажа, че сместа за палачинки може да се приготви предварително, дори е желателно. Тоест, на въпроса – може ли да забъркам смес за палачинки от предната вечер, отговорът е – Да, може. Това, което ще се случи е, че докато сместа престоява, брашното ще се овлажни от течността и на сутринта ще ви изглежда по-гъсто, та ще трябва да коригирате гъстотата като добавите мъничко течност – вода или мляко. Казвайки това, мисля, че е важно и друго нещо, което е от значение за младите домакини – яйцата са с различна големина, различните брашна поемат течностите по различен начин, така че тестото ви може да стане малко по-гъсто или малко по-рядко. Спазвайте пропорциите, но вярвайте на очите и инстинкта си и добавете течност или брашно, ако се налага.

## Продуктите за 14-16 палачинки за тиган с диаметър 28 см.

- 1 с. л. захар (ако ще ги ползвате за солена плънка, не слагайте захар)
- масло за намазване на тигана (може да ползвате мас или олио, но ароматът ще е различен)

</div></div>### Приготвяне:

Разбийте яйцата (и захарта) с миксер или вилица. Добавете млякото, разбъркайте и добавяйте брашното на части. Внимавайте да не се получат бучки.

Оставете готовата смес за палачинки да престои около 30 минути, разбъркайте и коригирайте гъстотата, ако се налага.

Загрейте тигана, намаслете дъното и изсипете сместа в единия край. Бързо завъртете тигана, така че сместа да се разпредели равномерно по цялото дъно.

След като крайчетата на палачинката започнат да се отлепят, обърнете и изпечете от другата страна.

Сервирайте готовите палачинки със сладко, мед, сирене, плодове – както ги обичате! У нас всеки ги хапва различно. Дъщерята – с малиново сладко, таткото – с мед, баткото – както дойде 🙂

## Ingredients

- 1 1/4 cups whole milk (10 fluid ounces; 280ml)
- 1 cup flour (5 ounces; 140g)
- 1 tablespoon melted unsalted butter or vegetable oil (1/2 ounce; 15ml), plus more for cooking
- Pinch kosher salt
- 1 tablespoon (8g) sugar, if making sweet crepes
- 1 tablespoon minced fresh herbs, such as parsley, tarragon, chervil, or chives (optional; for savory crepes)

Start blender on low speed and increase to high. Blend until smooth, about 10 seconds. Add herbs (if using) and pulse to combine. 2. <div></div>**To Cook:** Heat a 10-inch nonstick or well-seasoned cast iron or carbon steel skillet over medium heat for 2 minutes. Lightly grease with oil or butter, using a paper towel to wipe out the excess.

- <div class="wprm-recipe-instruction-text">When the onion begins to look glossy and golden, add carrots, celery and then stir through, leaving to cook for 4-5 minutes.</div>
- <div class="wprm-recipe-instruction-text">Next add ½ glass red wine (118ml) to the authentic Bolognese sauce and leave to simmer on low for a few minutes or until the wine evaporates.</div>
- <div class="wprm-recipe-instruction-text">Add the mince and break it down using a wooden spoon and/or fork before seasoning with only salt and pepper.</div>
- <div class="wprm-recipe-instruction-text">Mix every so often to ensure the mince is all cooked through, leaving to brown.</div>
- <div class="wprm-recipe-instruction-text">Once the water has evaporated, mix in the other half glass of red wine.</div>
- <div class="wprm-recipe-instruction-text">In total, authentic Bolognese sauce should cook for up to 4-5hr and this will make the meat more tender.</div>
- <div class="wprm-recipe-instruction-text">After allowing the wine to evaporate again, mix through the passata, paste and peeled tomatoes.</div>
- <div class="wprm-recipe-instruction-text">Crush tomatoes using the wooden spoon as you stir through.</div>
- <div class="wprm-recipe-instruction-text">After 1.5hr, add 1L/4.2cups boiled water to the pot and mix through. At this point, taste for salt – this is a preference of taste, add only if you want more as no other seasoning is necessary for an authentic Bolognese sauce!</div>
- <div class="wprm-recipe-instruction-text">Then after another hour or so, add more – the trick is when the sauce looks dry, add water, this will thicken the mixture and allow the mince to become more tender.</div>

<div class="adthrive-ad   adthrive-recipe adthrive-recipe-1" id="bkmrk--1"></div>- <div class="wprm-recipe-instruction-text">Allow the sauce to bubble only a small amount and not spurt everywhere. If it is bubbling too much, turn the heat down.</div>
- <div class="wprm-recipe-instruction-text">When the sauce is 1/2 hr away from being ready, boil 5L water in a second pot then add a tablespoon of rock salt, leaving it to dissolve.</div>
- <div class="wprm-recipe-instruction-text">Once the sauce has been cooking for up to 5hr, remove it from the heat and leave to rest.</div>
- <div class="wprm-recipe-instruction-text">Add your choice of pasta to the water (ours is Pappardelle) and cook according to the packet instructions.</div>
- <div class="wprm-recipe-instruction-text">While the pasta is boiling, prepare a large fry pan for mixing!</div>
- <div class="wprm-recipe-instruction-text">Next add a cup of full cream milk to your sauce and stir through then put it back on the stove for 5 minutes.</div>
- <div class="wprm-recipe-instruction-text">Finally, place a frypan on the stove at a low heat, and add a generous spoonful (or two!) of Bolognese sauce, covering the base.</div>
- <div class="wprm-recipe-instruction-text">Next, add the strained pasta into the pan along with a cup of pasta water.</div>
- <div class="wprm-recipe-instruction-text">Mix this through until the pasta is completely lathered before adding another generous amount of authentic Bolognese sauce and mix again.</div>
